Homemade Chicken a la King
Chicken a la King is a beloved dish that creatively utilizes leftovers, transforming them into a creamy and flavorful meal reminiscent of chicken pot pie. It's typically served over rice or noodles, or with bread or biscuits, making it a comforting and satisfying choice for cold days.

Ingredients
- 4 oz butter
- 8 oz mushrooms
- 1 cup onion, diced
- .5 cup flour
- .5 tsp garlic powder
- .5 tsp black pepper
- 2 cups Taking Stock Foods Classic Chicken Bone Broth
- 1 cup half and half
- 1 cup frozen peas
- .5 cup roasted pepper, chopped
- 2 cups cooked chicken, chopped rotisserie or leftover
Instructions
- In a large skillet, melt the butter over medium-high heat.
- Add the sliced mushrooms and chopped onions. Cook, stirring occasionally, until beginning to brown, about 5 minutes.
- Reduce heat to medium and add the flour, garlic powder, and black pepper to the mushroom onion mixture. Stir well to combine and eliminate any lumps.
- Cook, stirring constantly, over medium heat until the flour mixture starts to brown and has a toasty smell, about 3-5 minutes.
- Slowly pour in the Taking Stock Foods Classic Chicken Bone Broth, stirring constantly to dissolve the flour and create a smooth slurry.
- Bring the mixture to a boil, then add the half and half. Bring back to a simmer and cook for 5 minutes, stirring occasionally.
- Taste for salt and adjust seasoning if needed.
- Stir in the frozen peas, diced roasted red pepper, and cooked chicken. Cook until heated through.
- Serve immediately with cooked rice, pasta, bread, or biscuits.
