Hippy Dippy Chickpea Soup

Ingredients
- 1 tbsp olive oil
- 2 tsp curry powder
- 1 tsp ground cinnamon
- 1 tsp ground turmeric
- 3/4 cup onion, finely chopped
- 3/4 cup celery, finely chopped
- 1 can chickpeas, drained
- 4 cups Taking Stock Foods Ginger Turmeric Bone Broth
- 6 cups water
- 1 green bell pepper, diced
- 1 1/2 cups quinoa, rinsed
- salt, to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and celery, and sauté until translucent, about 3-5 minutes.
- Stir in curry, cinnamon, and turmeric, and cook until fragrant.
- Pour in bone broth, water, and chickpeas, and bring to a boil.
- Add diced bell pepper and quinoa, then reduce heat to a simmer.
- Cook until the quinoa is tender, approximately 20 minutes.
- Taste and adjust seasoning with salt, if necessary.
- Serve hot.
