Maddy and I love to cook together!
Recently, we were in the mood to make something exotic but homey. I remembered a fantastic dish that I made in culinary school. It was a slow cooked pork stew, with a strange lineup of ingredients including orange juice, milk, and coca cola.
I wanted to replicate the flavors of this delicious stew, but omitting the Coke and milk and make it in a crockpot.
The resulting recipe is such a hit that we named it Extra Special Crockpot Chicken.
We served the stewed chicken over steamed sweet potatoes, and garnished it with avocado, radish slices, farmers cheese, and cilantro. This is a dish you can eat with your eyes, but you’ll be happy that you don’t have to stop there.
